Ingredients

  • 1 unbaked 9-inch pie shell (store-bought or homemade)
  • 1½ cups (180 g) pecan halves, lightly toasted
  • 3 large eggs
  • 1 cup (200 g) packed light brown sugar
  • ½ cup (120 ml) light corn syrup (or maple syrup for a less-sweet pie)
  • ¼ cup (60 g) unsalted butter, melted and slightly cooled
  • 1 tsp vanilla extract
  • ½ tsp fine salt
  • Optional: 1 Tbsp bourbon, ¼ tsp ground cinnamon

Directions

  1. Heat oven to 350°F (175°C). Place a rack in the center.
  2. Toast pecans on a baking sheet 6–8 minutes until fragrant; cool.
